Zippy Mashed Potatoes - Hubby Rating

I came across this recipe on the Kraft website.  As soon as I saw it had horseradish in it, I knew I had to try it.  My husband loves horseradish sauce.   It seemed like a strange combination, but it had good ratings.  The recipe also calls for using sour cream.  I have started doing that recently and we like that addition.

The recipe calls for using instant mashed potatoes.  You could definitely make real mashed potatoes instead of the instant, if you prefer.  I have to tell you though, that this really gave the instant a very nice taste. 

I didn’t tell hubby that the potatoes were anything new.  I wanted him to tell me what he thought of them first.  I also wanted him to tell me if he could taste the horseradish.  I did not have to ask hubby if he liked the potatoes.  He immediately told me that they were very good.  I told him it was a new recipe.  He asked what was in it and I told him, sour cream and …. horseradish sauce.  He was surprised. I asked if he could taste it and he said he couldn’t, but he really, really liked it.  Now, if you know my hubby, you know that he just gave me a big compliment and that’s probably the most words that have come out of his mouth at once in a very long time.  LOL   I could taste of a hint of the horseradish, but I was probably seeking it out.

It’s very easy to make, especially if you are using instant potatoes.  Very good flavor!

Zippy Mashed Potatoes

Ingredients

1 cup BREAKSTONE’S Reduced Fat Sour Cream (I used a different brand & not non-fat because it’s what I had on hand)

1 Tbsp.  prepared horseradish

4 cups hot prepared instant mashed potatoes

 Instructions

 ADD sour cream and horseradish to hot potatoes; mix well. Serve immediately.
