Chicken Tortellini Skillet Recipe

This recipe is written for two people. If you have a family, then you will need to increase it. This follows my quick and easy rule for recipes. It is not any harder to make than spaghetti.
If you do not like chicken, then change it to ground beef or turkey. It taste great no matter what you do with it. I actually prefer ground beef myself.
I serve this will Texas toast or garlic bread as well as a fresh salad. We eat salad almost every night. I have cut back on the bread because, well, I love bread way too much and I need to watch my calorie intake.
Doesn’t it look delicious? I’m craving it now. I do not have the tortellini, so I will have to cure my craving with spaghetti.
Chicken Tortellini Skillet

Ingredients:
- 2 cups frozen cheese tortellini
- 1/2 pound boneless skinless chicken breast, cubed
- 1 tablespoon canola oil
- 1 cup meatless spaghetti sauce
- 1/2 cup shredded part-skim mozzarella cheese
Directions:
Cook tortellini according to package directions. Meanwhile, in a large skillet, cook chicken in oil over medium heat until juices run clear.
Drain tortellini; add to skillet. Stir in spaghetti sauce. Sprinkle with cheese. Reduce heat to low. Cover and cook for 3-5 minutes or until cheese is melted. Yield: 2 servings.
