Cajun Red Beans & Rice Meat Roll

Today, I could not think of anything to fix for dinner.  I decided I would fix a meat roll and then it came to me to try adding rice and beans to it.  This is a recipe that just came to me today, so I don’t know how it is going to turn out. 

Ingredients

1 lb of ground beef

Bisquick Mix

Lipton Cajun Sides - Red Beans & Rice

Shredded Cheese

Melted butter with garlic

Instructions

Prepare the red beans and rice as per the package instructions.  Brown the ground beef.  I seasoned it with salt and pepper.  Drain the ground beef.

For the roll - I used the recipe on the box for biscuits.  I placed parchment paper on my counter and then I rolled out the dough.  I make mine maybe a little thicker than a pie.  This roll is going to be heavy, so you don’t want it to fall apart when you roll it up.

I now take the parchment paper and move it and the roll to the cookie sheet.  Yes, past experience has taught me not to try and move the filled roll to a cookie sheet.  Now, add the rice and beans, then the hamburger and then the cheese. Did I mention that I have never learned the true art of rolling dough?  LOL

Okay, now roll it up.  This time I rolled up about half of it and then I started on the other end and they met in the middle.  It seems to have worked and it didn’t fall apart.

Make a few steam slots in the top.

 I place foil over the entire cookie sheet so that it doesn’t get too brown.  Bake for 15 minutes and then remove foil.  Bake for another 5 minutes or until done.  (cut open and make sure it is baked through)

Remove from oven and then spread the melted butter with  garlic powder on top.

Cool slightly and then enjoy!

Update: This was okay, but lacked spice.  My husband suggested adding nacho cheese sauce instead of the shredded cheese.

Hubby Rating is a 2 out of 5 due to lack of spice.
