Sloppy Joes & Baked Potatoes

I am not sure if I found this recipe in a cook book or if I just came up with it myself.  I took it from the idea of putting chili on a baked potato and I thought why not put Sloppy Joes’ on a baked potato? 

We have served this while camping and the kids loved it. 

The recipe is simple.  Bake your potatoes as you normally would.  Fix your Sloppy Joe’s as normal.  Open the baked potato and add butter, salt, pepper, if you like.  Sprinkle a little shredded cheese and then top with the Sloppy Joe’s.  I add a little sour cream to the top. 

I call the geen beans ”Poor Man’s Asparagus”.  Why?  I fix my asparagus much the same way as the green beans.  I fix them on my griddle.  I heat up olive oil, add drained green beans and then season with pepper with salt and garlic powder.  I cook on the griddle until warm and tender.  If you do not have a griddle then I’m sure a skillet will work the same way.  I love green beans fixed this way.
