Super Easy Dinner
I made something for dinner last night that I have never had in my life. Are you ready for this? It was grilled cheese sandwiches. I’m serious, I have never had one before. My husband couldn’t believe it. I didn’t like cheese as a child, so why would I eat it? I have recently started liking cheese, but I still don’t just eat just a slice of cheese.
The verdict - it was okay. I wouldn’t eat it all the time, but since I love Texas toast, I can tolerate it. I love cheese in burritos, pizza, etc., but not as a main ingredient.
Last night’s dinner reminded me of my childhood. When my grandmother was alive, we had a big Sunday dinner every Sunday. After my grandmother died, my mother became depressed and didn’t do much around the house. I was in charge of all the cooking during the week. On Sundays, my Dad and I were told to fend for ourselves. I think we both enjoyed doing that. We could eat whatever we wanted. The dinner last night was somewhat like that. We had grilled cheese and salad. I know, you are supposed to serve tomato soup with grilled cheese. The problem with that is I don’t like tomato soup. 
Oooh, I love cheese, so I think it’s no surprise that grilled cheese sandwiches are high on my list of favorite foods. As you mention, they are definitely a comfort food that makes one feel warm and fuzzy inside!
OK, grilled cheese is totally allowed, especially if you include a couple of really tasty cheeses like smoked Gouda or white cheddar. The bread can also kick it up a notch - Sourdough is especially nice!
I like tiny grilled cheese sandwiches with chili - it’s a nice departure from crackers and chips and the little sandwiches are very dip-able!
