Burritos - My Way
Are burritos something that are commonly served in homes? I never had them growing up. I started making them for my husband and I shortly after getting married. We had a party once and served them and everyone seemed surprised, but pleased. I guess maybe they are much more common now than in the past. I’m not sure.
I serve my burritos when we camp a few times each season. Everyone seems to like them because you can add whatever toppings you want to make them your own. Here is my basic recipe:
My Burritos
Ingredients:
1 lb of ground beef
1 package of taco or burrito seasoning (I prefer Taco Bell)
1 small can of re-fried beans
1 package of tortillas
Toppings:
shredded cheese - I use a Mexican blend
sour cream
jalapenos
nacho cheese sauce
salsa
chopped onions
olives, black and/or green
Instructions:
Brown the ground beef and then drain out the grease. Add the taco seasoning mix according to package directions.
Heat the re-fried beans on the stove or in the microwave.
Place tortilla on plate and then assemble your burrito. I add beef, re-fried beans, cheese, onions, jalapenos, olives. I then attempt to fold the burrito. I still can’t seem to get this step correct. I add nacho cheese to the top of the burrito. I then microwave my burrito for about 30 seconds. I like for the shredded cheese to melt on the inside.
I then top the burrito with sour cream and a jalapeno.
I’m noticing two things about my food: 1) it doesn’t look all that appetizing in photos and 2) I really need to buy new dishes. I have had these for 23 years. We have used paper plates almost all our married life, but have just started using real dishes to save money. I may invest in a more up-to-date pattern soon.
