Gooey Butter Cake

Gooey Butter cake was first made in St. Louis around the year 1943. This recipe came from a mistake when a baker messed up a cake recipe. He tried it and found it to be very good. I am from the St. Louis area, so I thought I would share it with you.
This is a fairly easy recipe to make. There are several variations to the recipe and from what I understand; bakeries do not use this version. They are not sharing their recipe with us however.
My family loves gooey butter cake and it’s something that we take on our camping trips quite often. We cut it in small pieces and eat it all night. I didn’t realize how much everyone liked it until I brought it on a camping trip a few years ago. It was gone in just a few minutes, so I started making bigger batches.
Gooey Butter Cake
Ingredients:
1 stick of margarine or butter
1 box powdered sugar
3 large eggs
1 box yellow cake mix
8 oz. Cream cheese
Instructions:
Preheat oven to 350 degrees and grease 9×13x2 inch pan.
Crust: mix cake mix, 1 egg and butter together in a bowl and pour into pan. Pat out to edges to layer the bottom of the pan.
Filling: mix cream cheese, 2 eggs and 2/3 box of powdered sugar. Gradually mix in the powdered sugar. Mix until lumps are gone. Then pour mixture over the top of the crust in the pan. Bake for about a half hour or until edges are a light brown. ENJOY!
